Current favorite breakfast
Oatmeal with chopped pecans, agave syrup, blueberries, and chocolate chips. I eat this with a decaf black tea with sugar free vanilla creamer. It’s super yummy and keeps me warm when it’s super cold in the morning.

High Protein Breakfast
When you’re pregnant, every meal counts—not just for your energy and well-being, but also for your growing baby. This morning, I whipped up a high-protein breakfast that’s not only delicious but also packed with essential vitamins and nutrients to support a healthy pregnancy.
The Star of the Show: Ground Turkey Scramble
Protein is a key nutrient during pregnancy, helping with fetal growth and keeping your energy levels steady throughout the day. Ground turkey is an excellent lean protein source, and pairing it with vibrant veggies adds layers of flavor and essential vitamins.
What’s in My Scramble?
• Ground Turkey: Lean, protein-packed, and rich in iron, which helps prevent anemia during pregnancy.
• Portobello Mushrooms: Full of antioxidants and a good source of B vitamins for energy production.
• Corn: A sweet pop of flavor and a source of fiber and folate.
• Red Onions: Packed with antioxidants and add a tangy kick.
• Tomatoes: Loaded with vitamin C and lycopene for immune support.
• Avocado: Creamy and rich in healthy fats, folate, and potassium.
• Sour Cream: A touch of creaminess for flavor and a bit of calcium.
• Chipotle Aioli: Smoky, slightly spicy, and irresistibly creamy—this topping takes the scramble to the next level
Why This Meal is Perfect for Pregnancy
This scramble isn’t just satisfying—it’s balanced. The mix of protein, healthy fats, fiber, and essential vitamins keeps blood sugar stable, supports digestion, and provides the nutrients your baby needs for development. Plus, it’s quick to make, which is always a win on busy mornings.
How I Made It
1. Cook the ground turkey in a skillet until browned.
2. Add chopped portobello mushrooms, red onions, and corn. SautƩ until veggies are tender.
3. Stir in diced tomatoes and cook for another minute.
4. Serve with sliced avocado on top and a dollop of sour cream.
Final Thoughts
This breakfast left me feeling full, energized, and confident that I started my day with a nutrient-packed meal. Whether you’re pregnant or just looking for a healthy breakfast idea, this ground turkey scramble is a winner.

Mixed berry smoothie
I made this mixed berry smoothie with vanilla mushroom powder as a sweetener, along with coconut milk, and oat milk ice cream from Trader Joe’s.
For breakfast, I made two mini everything bagels with a cheese and red onion omelette in the middle. I started by adding Philadelphia cream cheese to both sides of the bagel, then added the egg omelette and topped it off with siracha on top of the egg. It was delicious and super filling. I just got my nails done, got a regular pedi and a gel mani. It’s been 5 months since I got my last mani since I got nail fungus from this spot in Toluca Lake. I feel like myself again!

Thursday Morning/Afternoon
Lindsay got this egg, potato, bacon, and cheese scramble. She had coffee with it. Molly had an early Thanksgiving meal. She got turkey, mash, bread, and veggies and cranberry juice. We caught up and talked about the past, present, and future. Molly is the type of friend where when you see her and hang, it's like we pick up where we left off. It doesn't matter how much time has passed either.
It started to rain as soon as we were about to leave.
